Pacific Shrimp Fu-Yung - serves 4
Preparation - 15 minutes, cooking time - 10 minutes
6 eggs
1/2 cup chicken stock
2 tbsp vegetable oil
4 scallions, thinly sliced
1 red chili, seeded and chopped
1 cup shiitake mushrooms, thinly sliced
6 oz cooked peeled shrimp
4 oz pork or ham, shredded
3/4 cup bean sprouts
1 tbsp soy sauce
handful of fresh cilantro leaves
Beat together the eggs and stock until well blended.
Beat the oil in a large frying pan and stir-fry the scallions, chili, and mushrooms over a medium heat until beginning to soften.
Add the shrimp, pork or ham, and bean sprouts, cook for 30 seconds, then add the soy saice and cilantro.
Pour over the beaten egg mixture and cook gently, stirring, until the egg is just set; serve
immediately.
