Ocean Cheese and Potato Pie - serves 4
Preparation - 15 minutes, cooking time - 20 minutes
4 large potatoes, cubed
2 cups milk
9 oz smoked haddock
4 tbsp butter
1/4 cup all-purpose flour
1 3/4 cups cheddar, grated
4 tbsp fromage frais
1 1/4 cups frozen peas
7 oz large, cooked, peeled shrimp
2 tbsp snipped chives
salt and ground black pepper
Cook the potatoes in a large pan of boiling, salted water until tender.
Heat the milk in a frying pan, add the haddock and poach for 5 minutes or until just cooked.
Transfer the fish to a plate and let it cool. Do not discard the poaching milk.
Melt half the butter in a pan and stir in the flour. Cook gently for 1 minute, stirring.
Gradually add the reserved milk, stirring to make a smooth sauce. Bring to a boil, then remove from the heat and stir in
three-quarters of the grated cheese, plus the fromage frais, peas, shrimp, and chives.
Flake in the fish, discarding the skin and any bones, and season to taste. Transfer to a ovenproof dish.
Preheat the broiler to medium. Drain the potatoes, mash well with the remaining butter and season
to taste.
Spoon the mash over the fish mixture and scatter the reservedcheese on top. Grind over some black pepper,
then cook under the broiler for 3-4 minutes until the top is golden. Serve warm.
