Mexican Tuna Salad - serves 4
Preparation - 10 minutes
4 ounces drained canned tuna, flaked
1/2 medium tomato, chopped
1/4 cup each finely chopped red onion and red or green bell pepper
2 tbsp plus 2 tsp reduced-calorie mayonnaise
1 tbsp each chopped cilantro and lime juice (no sugar added)
In small mixing bowl combine all ingredients, mixing well.
Serve this Mexican-style salad in a taco with shredded lettuce and diced tomato.
