| Cherry Brandy Mincemeat Mold

Cherry Brandy Mincemeat Mold - serves 10
1 (8-serving-size) package cherry-flavored gelatin
2 cups boiling water
1 1/2 cups cold water
1/4 cup cherry brandy
2 cups ready-to-use mincemeat
1/2 cup chopped pecans
Whipped cream
In a large bowl, dissolve gelatin in boiling water. Stir in cold water and brandy. Measure out ½ cup gelatin mixture and place in the bottom of a 6-cup mold. Chill until firm. Chill remaining gelatin until syrupy and slightly thickened.
Fold mincemeat and pecans into slightly thickened gelatin. Spoon into mold on top of firm gelatin. Chill until firm. Unmold and garnish with whipped cream.
