Beef Stew with Noodles - serves 6
Preparation time: 30 minutes, cooking time: 30 minutes
1 pouch quick stew mix
1 lb beef cut in 1-1/2” cubes
8 cups fresh, frozen or canned vegetables, cut in chunks
1 tsp dried thyme leaves
10 oz can beef broth
1/2 cup burgundy cooking wine (optional)
Mix stew marinade pouch with water according to package directions and marinate meat in large covered pot for 30 minutes.
Bring meat and liquid to a boil. Season to taste with pepper. Add remaining ingredients and stir. Cover, reduce heat and simmer for 20-30 minutes. Thicken with a mixture of 2 tbsp each of flour and water, if desired.
Serve over noodles or with toast.
