Baked Shrimp with Feta Cheese

Baked Shrimp with Feta Cheese

12 fresh jumbo shrimp, cleaned and de-veined
2 tbsp butter
1 egg
1/4 cup heavy cream
1/4 cup Feta cheese, crumbled
Dash or Tabasco sauce
1 large tomato, chopped,
Juice from 1/2 lemon
1 tbsp fresh chopped parsley
Fresh ground black pepper to taste

Preheat oven to 400F. degrees. Cook shrimp in the butter until lightly pink. Place the shrimp into a small baking dish.
In a small bowl combine the egg and cream and stir until mixed. Add in the Feta cheese and Tabasco sauce and continue stirring. Pour over the shrimp.
Place the chopped tomato over the shrimp and bake about 12 minutes until the cheese begins to bubble. Sprinkle with lemon juice and parsley.
