Soft-Shell Crabs, Sauteed

Soft-Shell Crabs, Sauteed - serves 3

1/4 cup flour
Salt and ground pepper
6 soft-shell crabs
6 tbsp butter
1 tbsp oil
Juice of 1 lemon

Season the flour with salt and pepper, dust the crabs with it, and shake off excess.
In a large skillet, heat the butter and oil. Toss in the crabs and cook over moderately high heat about 3 minutes each side. Remove to a warm platter.
Squeeze in the lemon juice and stir, scraping up all the brown bits. Pour over the crabs.
