Tropical Peach Salad - serves 8

1 cup chopped, pitted and peeled peaches
8-oz. can pineapple chunks, drained
1 cup shredded coconut
1 cup miniature marshmallows
1 cup sour cream
1 tbsp vanilla
2 peaches, sliced, peeled and pitted
1/2 head lettuce, shredded

Combine peaches, pineapple, coconut, marshmallows, sour cream and vanilla; mix gently. Spoon onto lettuce; garnish with sliced peaches. Serve.
