Crème de Menthe Brownies
1/2 cup butter or margarine
1 cup sugar
4 eggs
1 cup all purpose flour
1/2 tsp salt
16 oz can chocolate syrup
2 tsp vanilla extract
Cream 1/2 cup butter with 1 cup sugar, beating until light and fluffy. Add the eggs and beat well. Combine the flour and salt; add to the creamed mixture alternately with chocolate syrup beginning and ending with flour mixture. Stir in vanilla extract. Pour batter into a greased and floured* 13 x 9 x 2 inch baking pan. Bake at 350 degrees for 25 to 28 minutes. Cool completely. Brownies will shrink from the pan while cooling.
Frosting:
1/4 cup butter or margarine
2 tbsp crème de menthe
2 cups sifted powdered sugar
Cream 1/4 cup butter, crème de menthe and powdered sugar, mixing well. Spread evenly over cool brownies. Chill in the refrigerator for one hour.
Glaze:
1/4 cup butter or margarine
6 oz pkg semi-sweet chocolate chips
Combine butter with 1/4 cup butter in the top of a double boiler. Bring water to a boil, reduce heat to low and cook until chocolate melts. Spread over brownies. Chill for another hour. Cut into square. Makes about 3 1/2 dozen.
