Stir-fried Pineapple Chicken

Stir-fried Pineapple Chicken - serve 4

1/2 lbs boned chicken
1 lbs pineapple tidbits (drained)
1 tsp brandy
1 tsp soy sauce
1 tsp sugar
Cornstarch
Sesame oil (optional)
Peanut oil
Chicken broth or stock

Cut chicken into thin slices. Heat several tbsp of oil in bottom of wok.
Add pineapple, several dashes of salt and enough broth to cover. Cook for 1 minute.
Add chicken and cornstarch, diluted in water, to make a thick paste, sesame oil, brandy, soy sauce and sugar.
Cook for 2 to 3 minutes, stirring constantly. Serve
