Sweet and Sour Meatballs with Rice

Sweet and Sour Meatballs with Rice - serves 6

Preparation time: 25 minutes - cooking time: 25 minutes.

1 lb lean ground beef
1 egg
4 tbsp cornstarch
2 tbsp onions, finely chopped
1 tsp salt
1 cup pineapple juice
1 tbsp butter, melted
1 tbsp soy sauce
3 tbsp vinegar
6 tbsp water
1/2 cup sugar
1/2 can pineapple chunks, drained

Rice

Combine ground beef, egg, 1 tbsp cornstarch, onion, salt, and pepper. Form into balls. Brown meatballs in oil until cooked through; drain.
Heat pineapple juice and butter over low heat for several minutes.
Add 3 tbsp cornstarch, soy sauce, vinegar, water, and sugar; cook until thick.
Add meatballs and pineapple; heat thoroughly.
Serve with rice.
