Brisket with Apricots and Lemon Juice - serves 6
1 pound apricots dried
4 cups water
2 onions minced
3 pounds brisket
2 tbsp vegetable or canola oil
1 1/2 tsp salt
1 tbsp lemon juice
2 tbsp brown sugar
1 tsp cinnamon ground
Wash the apricots and soak in the water for 1 hour.
Brown the onions and meat in the oil. Add the salt, lemon juice, sugar, cinnamon and undrained apricots. Cover and cook over low heat 2 1/2 hours or until meat is tender.
