Shredded Wheat with Banana-Milk Topping - serves 2
1 ripe banana
2 cups bite-size shredded wheat biscuits
1/4 cup wheat bran
2 tbsp sliced almonds
1 1/2 cups skim milk
1 or 2 drops vanilla extract
Peel banana and place in a heavy plastic bag. Freeze at least 6 hours. Remove from freezer and cut into eighths.
Divide shredded wheat biscuits into two serving bowls. Top with wheat bran and almonds. In blender, process banana slices, milk and vanilla until slightly fronthy. Pour over cereal.
Serve immediately.
