Sauteed Zucchini - serves 6
1 tbsp vegetable oil
2 pounds zucchini, sliced into 1/2-inch-thick rounds
1/2 cup whole-wheat bread crumbs, toasted
2 tbsp minced almonds
1 tbsp grated Parmesan cheese
1/4 cup fresh parsley, chopped
1 tbsp chopped fresh oregano or 1/2 tsp dried oregano
1 clove garlic, minced
freshly ground black pepper to taste
In a nonstick skillet, heat oil over medium-high heat. Add zucchini, and saute until just tender and lightly browned, 5-8 minutes.
Combine remaining ingredients and add to zucchini. Remove from heat, toss gently and serve immediately.
