Pasta with Swiss Chard and Cheese - serves 2
2 tsp olive or vegetable oil
1 tbsp chopped onion
2 small garlic cloves, minced
1 cup thoroughly washed and drained Swiss chard chopped
Dash each black pepper and crushed red pepper
1/4 cup canned ready-to-serve low-sodium chicken broth
1 1/2 cups cooked spaghetti or linguine (hot)
2 tsp grated Parmesan or Romano cheese
In 10-inch nonstick skillet heat oil; add onion and garlic and cook over medium-high heat, stirring frequently,
until onion is traslucent, about 1 minute. Add Swiss chard, black pepper, and red pepper. Reduce heat to medium and cook,
stirring frequently, for 2 minutes.
Add broth and reduce heat to low; let simmer until Swiss chard is tender-crisp, about 8 minutes.
Add spagetti and toss to combine. Sprinkle with cheese.
