Spring Peas and Carrots - serves 2
Preparation - 20 minutes
2 cups sugar snap peas, stem ends and strings removed
1 cup thinly sliced carrots
1/2 cup apple juice (no sugar added)
2 tsp reduced-calorie margarine
Garnish: mint sprigs
In microwavable casserole combine first 3 ingredients. Cover and microwave on high (100%) for 5 minutes, until tender-crisp.
Add margarine and stir to combine, microwave, uncovered, on high for 3 minutes. Let stand 1 minute.
To serve, transfer to serving platter and garnish with mint sprigs.
