Florentine Potatoes - serves 2
Preparation - 30 minutes
9 ounces pared all-purpose potatoes, thinly sliced
1/2 cup chopped onion
1 tbsp plus 1 tsp reduced-calorie margarine
1 small garlic clove, minced
1/2 cup thoroughly drained cooked spinach
1/4 cup plain low-fat yogurt
1/4 tsp ground nutmeg
In microwavable casserole combine 2 cups water and the potatoes. Cover and microwave on high (100%) for 10 minutes, stirring once halfway through cooking, until potatoes are soft.
Drain potatoes, transfer to medium mixing bowl. Using a fork, mash potatoes; set aside.
In same casserole combine onion, margarine, and garlic; microwave on high, uncovered, for 1 minute, stirring once halfway through cooking.
Add potatoes, spinach, yogyrt, and nutmeg and stir to combine. Microwave on high for 1 minute, until heated through.
