Fresh Melon and Mango Soup
2 medium peaches, peeled, pitted and cubed
2 large ripe mangos, peeled, pitted and cubed
1 small ripe cantaloupe, peeled, seeded and cubed
3 cups frozen unsweetened strawberries
1/3 cup frozen orange juice concentrate
1/2 cup plain, nonfat yogurt juice of 1/2 lime
1/3 cup port wine
2 tbsp orange liqueur
1 1/2 tsp raspberry winegar
Garnish: 1/2 cup plain nonfat yogurt
In the work bowl of food processor fitted with a metal blade, process all ingredients until thick and creamy.
Pour into a serving bowl and freeze for about 20 minutes. Spoon into individual bowls and garnish each serving with a heaping tsp of yogurt. Serve immediately.
