Rice Cake and Cheese Snack - serves 2
2 rice cakes, unsalted
1 tsp prepared yellow mustard
1/4 cup lowfat cheddar cheese
Preheat oven to 350F. Place rice cakes on baking sheet or aluminum foil and bake 3 to 4 minutes, or until crisp.
Remove from oven, spread with mustard and top with cheese. Return to oven and bake 3 to 4 minutes, or just until cheese melts.
Serve immediately.
